  • Japanese eggplants (300g)
  • white miso paste (50g)
  • mirin (30ml)
  • soy sauce (15ml)
  • sesame oil (10ml)
  • brown sugar (15g)
  • green onions, thinly sliced
  • toasted sesame seeds

Before you get started, preheat your oven to 400°F (200°C). Next, prepare the eggplants by slicing them in half lengthwise. Score the flesh in a crisscross pattern, being careful not to cut through the skin. Place the eggplants on a baking sheet lined with parchment paper.

In a bowl, combine the white miso paste, mirin, soy sauce, sesame oil, and brown sugar. Mix until the sugar has dissolved and the mixture is smooth. Brush the miso glaze generously over the scored eggplants, making sure to coat them evenly.

Roast the eggplants in the preheated oven for 20-25 minutes, or until the flesh is tender and caramelized. The miso glaze will create a beautiful golden crust on top of the eggplants.
