Magical Shepherd’s Pie Recipe: A Twist You Won’t Believe!

Ingredients

  • 500g ground lamb
  • 500g sweet potato
  • 200ml coconut milk
  • 2 tbsp curry powder
  • 150g green peas
  • 1 tbsp minced fresh ginger
  • 3 cloves minced garlic
  • 1 diced onion
  • 2 tbsp coconut oil
  • to taste

Preparation

To start, preheat your oven to 200°C. Peel and chop the sweet potato into chunks, then boil until tender. Once cooked, drain the potatoes and mash them with coconut milk, curry powder, salt, and pepper, until smooth and creamy. Set aside.

In a skillet, heat coconut oil over medium heat. Add minced garlic, ginger, and diced onion, and sauté until fragrant. Add in the ground lamb, breaking it up with a spoon, and cook until browned. Stir in green peas and season with salt and pepper to taste.

Transfer the lamb mixture to a baking dish, then spread the mashed sweet potato on top in an even layer. Use a fork to create a textured surface on the potatoes. Place the dish in the oven and bake for 20-25 minutes, or until the sweet potato topping is golden brown and crispy.

Serving

Once out of the oven, let the shepherd’s pie cool for a few minutes before serving. Spoon out a generous portion onto each plate, making sure to get a mix of the lamb and sweet potato layers in every bite. This dish pairs wonderfully with a side salad or some steamed greens for a well-rounded meal.

To take this shepherd’s pie to the next level, try adding a sprinkle of shredded coconut on top of the sweet potato before baking. The subtle sweetness and added texture will elevate the dish and surprise your taste buds!
