Spiced Lamb Tagine with Prunes and Almonds

Today, I’m excited to share a cozy and flavorful Moroccan dish that always reminds me of cool autumn nights. This Spiced Lamb Tagine with Prunes and Almonds is the perfect balance of savory and sweet, with a touch of warmth from aromatic spices. It’s a dish that’s sure to delight your taste buds and warm your soul.

Ingredients:

  • 500g lamb shoulder, diced
  • 200g prunes
  • 50g slivered almonds
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp ground turmeric
  • 500ml chicken broth
  • 2 tbsp olive oil
  • to taste

Kitchen Tools:

  • tagine pot
  • chef’s knife
  • cutting board
  • wooden spoon
  • measuring spoons

To start, heat the olive oil in a tagine pot over medium heat. Add the chopped onion and minced garlic, cooking until softened. Add the diced lamb shoulder and brown on all sides. Season with salt, pepper, ground cinnamon, ginger, cumin, coriander, and turmeric, stirring to coat the meat evenly.

Next, add the prunes, slivered almonds, and chicken broth to the pot. Bring to a simmer, then cover and reduce the heat to low. Let the tagine simmer gently for 2-3 hours, or until the lamb is tender and the flavors have melded together beautifully.

Once the lamb is cooked to perfection, taste and adjust the seasoning if necessary. Serve the Spiced Lamb Tagine with Prunes and Almonds hot, garnished with extra almonds and fresh cilantro. This dish pairs wonderfully with couscous or crusty bread to soak up all the delicious juices.

The approximate total weight of the cooked dish is 900g, with 4 servings of around 225g each. One serving is approximately 400 calories.

One tip to enhance the flavors of this dish is to toast the slivered almonds in a dry skillet until they are golden and fragrant before adding them to the tagine. This extra step adds a lovely nuttiness to the dish that takes it to the next level.

I hope you enjoy making and savoring this Spiced Lamb Tagine with Prunes and Almonds as much as I do. Feel free to experiment with the spices and ingredients to make it your own signature dish. Happy cooking!
