Ingredients:

  • arborio rice (300g)
  • mushrooms, sliced (200g)
  • onion, finely chopped (1 medium)
  • garlic, minced (3 cloves)
  • vegetable broth (1 liter)
  • nutritional yeast (2 tbsp)
  • coconut milk (200ml)
  • white wine (100ml)
  • fresh parsley, chopped (for garnish)
  • olive oil (2 tbsp)
  • salt and pepper, to taste

  • chef’s knife
  • cutting board
  • grater

To start, heat olive oil in a saucepan over medium heat. Add the chopped onion and garlic, sautéing until fragrant. Next, add the sliced mushrooms and continue cooking until they are golden brown and softened.

Add the arborio rice to the pan, stirring to coat each grain in the oil. Pour in the white wine and let it simmer until the liquid is absorbed. Gradually add in the vegetable broth, one ladle at a time, stirring constantly until the rice is cooked through and creamy.

Stir in the coconut milk and nutritional yeast, giving the risotto a rich and indulgent texture. Season with salt and pepper to taste, adjusting as needed. Remove from heat and let the risotto rest for a few minutes to allow the flavors to meld together.

Serve the creamy mushroom risotto hot, garnished with freshly chopped parsley for a pop of color and freshness. This dish weighs approximately 1200g when cooked and serves 4 people, with each serving averaging around 300g. Each serving contains approximately 350 calories.
