Ingredients:

  • 3 medium ripe mangoes
  • 400ml coconut milk
  • 2 red chili peppers
  • 1 tbsp fresh ginger
  • 3 garlic cloves
  • 500ml vegetable broth
  • 1 lime, juiced
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish

Next, I pour in the coconut milk and bring the soup to a gentle boil before reducing the heat to let it simmer for another 10 minutes.

Once the soup has cooked down and all the flavors have melded together, I use an immersion blender to puree everything until smooth and creamy. I then season the soup with salt, pepper, and a squeeze of fresh lime juice for a burst of citrusy goodness.

To serve, I ladle the Spicy Mango Coconut Soup into bowls and garnish with fresh cilantro leaves for a pop of color and herbaceous aroma. This soup is best enjoyed hot, allowing the richness of the coconut milk and the heat from the chilies to warm you from the inside out.
