Spicy Mango Chicken Stir-Fry

Today, I’m excited to share with you my latest creation: Spicy Mango Chicken Stir-Fry. This dish is inspired by the vibrant flavors of summer, bringing together the sweetness of ripe mangoes with the heat of spicy peppers. It’s a perfect balance of sweet and spicy that will keep you coming back for more.

For this recipe, you will need the following ingredients:

  • 500g chicken breast (cut into strips)
  • 1 large ripe mango (diced)
  • 1 red bell pepper (sliced)
  • 1 green chili pepper (sliced)
  • 3 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 2 tbsp honey
  • 3 cloves of garlic (minced)
  • 1-inch piece of ginger (minced)
  • 1 tbsp cornstarch
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

In addition to the ingredients, you will need the following kitchen tools:

  • wok
  • chef’s knife
  • cutting board
  • mixing bowls
  • measuring spoons
  • whisk

To start, heat the vegetable oil in a wok over medium-high heat. Add the minced garlic and ginger, and sauté until fragrant. Add the chicken strips and cook until they are browned on all sides.

Next, add the diced mango, sliced bell pepper, and chili pepper to the wok. Stir in the soy sauce, rice vinegar, and honey. Season with salt and pepper to taste. Allow the mixture to simmer for a few minutes until the peppers are slightly softened.

In a small bowl, mix the cornstarch with a little water to create a slurry. Slowly pour the slurry into the wok, stirring constantly to thicken the sauce. Continue cooking for another 2-3 minutes until the sauce has thickened and coats the chicken and vegetables.

Once the sauce has reached the desired consistency, remove the wok from the heat. Serve the Spicy Mango Chicken Stir-Fry hot over steamed rice or noodles.

This Spicy Mango Chicken Stir-Fry weighs approximately 1200g total and serves 4. Each serving is about 300g and has approximately 350 calories.

One unique tip for this dish is to sprinkle chopped cilantro over the stir-fry just before serving. The fresh herbal flavor of cilantro adds a beautiful contrast to the sweet and spicy dish.
