Ingredients:

  • beef stew chunks (600g)
  • fresh cranberries (200g)
  • orange juice (300ml)
  • carrots, sliced (2 large)
  • potatoes, cubed (3 medium)
  • onion, diced (1 large)
  • garlic, minced (3 cloves)
  • beef broth (500ml)
  • bay leaves (2)
  • salt and pepper to taste

  • Dutch oven
  • wooden spoon
  • measuring cup

Start by heating a Dutch oven over medium heat. Season the beef stew chunks with salt and pepper, then brown them on all sides in the Dutch oven. Once browned, remove the beef and set it aside.

In the same Dutch oven, sauté the diced onion and minced garlic until fragrant. Add the sliced carrots and cubed potatoes, cooking for a few minutes until slightly softened. Pour in the beef broth and orange juice, then return the browned beef to the pot. Add the fresh cranberries and bay leaves.

Bring the stew to a simmer, then reduce the heat to low and cover. Let it simmer for about 2 hours, stirring occasionally, until the beef is tender and the flavors have melded together.

Once the stew is ready, taste and adjust the seasoning with salt and pepper as needed. Serve hot, garnished with fresh parsley if desired.
