Today, I’m excited to share a refreshing and unexpected salad recipe that perfectly balances sweet and savory flavors. This Roasted Eggplant and Grapefruit Salad is a unique twist on a classic dish, combining the earthy taste of roasted eggplant with the bright acidity of grapefruit. It’s the perfect way to brighten up any meal and impress your guests with something a little out of the ordinary.

Ingredients:

  • 1 medium eggplant, cubed
  • 2 grapefruits, peeled and segmented
  • 1/2 red onion, thinly sliced
  • 50g feta cheese, crumbled
  • Handful of fresh mint leaves, chopped
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • Salt and pepper to taste

To start, preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Place the cubed eggplant on the baking sheet, drizzle with olive oil, and season with salt and pepper. Roast in the oven for about 20-25 minutes, until the eggplant is tender and slightly caramelized.

While the eggplant is roasting, prepare the dressing by whisking together the olive oil, balsamic vinegar, salt, and pepper in a small bowl.

Once the eggplant is done, remove it from the oven and let it cool slightly. In a large mixing bowl, combine the roasted eggplant, grapefruit segments, sliced red onion, crumbled feta cheese, and chopped mint leaves. Drizzle the dressing over the salad and gently toss to combine.

Serve the Roasted Eggplant and Grapefruit Salad immediately as a side dish or a light main course. The flavors of the roasted eggplant, tangy grapefruit, and creamy feta cheese complement each other beautifully, creating a dish that is both light and satisfying.
