Delicious Pumpkin Apple Soup for Fall

As the weather gets colder and the leaves start to change, I always find comfort in cozying up with a warm bowl of soup. Today, I’m excited to share a unique recipe for Pumpkin Apple Soup that’s perfect for the fall season. The combination of sweet pumpkin and tart apples creates a rich and flavorful dish that will surely become a new favorite in your autumn rotation.

Ingredients:

  • 1 small pumpkin (about 500g)
  • 2 apples (about 300g)
  • 1 onion (about 100g)
  • 2 garlic cloves
  • 1 liter vegetable broth
  • 1 cup coconut milk
  • 1 tablespoon curry powder
  • 1 teaspoon cinnamon
  • Salt and pepper to taste

Kitchen Tools:

  • chef’s knife
  • cutting board
  • large pot/li>
  • immersion blender

To start, heat some olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, cooking until softened and fragrant. Next, add in the diced pumpkin and chopped apples, stirring to coat them in the oil and aromatics.

Pour in the vegetable broth, coconut milk, curry powder, cinnamon, salt, and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20-25 minutes, or until the pumpkin and apples are tender.

Using an immersion blender, carefully blend the soup until smooth and creamy. Adjust the seasoning to taste, adding more salt and pepper if needed.

Serve the Pumpkin Apple Soup hot, garnished with a swirl of coconut milk and a sprinkle of cinnamon for an extra touch of flavor. This soup pairs perfectly with crusty bread or a simple green salad for a complete meal.

The total weight of the cooked Pumpkin Apple Soup is approximately 1500g, with about 6 servings. Each serving weighs around 250g, with an estimated calorie count of 150 per serving.

One unique tip for this recipe is to roast the pumpkin and apples before adding them to the soup for an extra depth of flavor. Simply toss the diced pumpkin and chopped apples with a bit of olive oil and roast in the oven until caramelized before incorporating them into the soup.

I hope you enjoy making and savoring this Pumpkin Apple Soup as much as I do. Feel free to adjust the seasonings or add toppings to make it your own. Happy fall cooking!
