That’s why I’m excited to share my latest creation with you today: a Turmeric Cauliflower Rice Bowl. Packed with vibrant colors and flavors, this dish is the perfect balance of wholesome ingredients and delicious taste.

Ingredients:

  • 1 medium cauliflower, grated
  • 1 large carrot, grated
  • 1 red bell pepper, diced
  • 2 tbsp tahini
  • 1 tsp turmeric
  • 1/2 tsp garlic powder
  • 1/2 tsp fresh ginger, grated
  • 1 avocado, sliced
  • 1 tbsp sesame seeds
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

To start, grate the cauliflower and carrot using a grater and place them in a large bowl. Heat a skillet over medium heat and add the grated vegetables along with the diced bell pepper. Stir in the tahini, turmeric, garlic powder, and fresh ginger. Cook for about 5-7 minutes until the vegetables are tender and fragrant.

While the vegetables are cooking, slice the avocado and prepare the garnishes. Once the cauliflower rice mixture is ready, divide it into bowls and top with sliced avocado, sesame seeds, and fresh cilantro. Serve with lime wedges on the side for a burst of citrus flavor.
