Japanese-Inspired Dish: Umami Mushroom Ramen

Today I’m excited to share a Japanese-inspired dish that’s perfect for a cozy evening at home. This Umami Mushroom Ramen is a savory and satisfying meal that will warm you up from the inside out. The rich flavors of the mushrooms combined with the umami-packed broth make for a truly comforting bowl of noodles.

Ingredients:

  • Shiitake mushrooms (200g)
  • Oyster mushrooms (150g)
  • Enoki mushrooms (100g)
  • Soy sauce (30ml)
  • Mirin (20ml)
  • Sesame oil (15ml)
  • Garlic (2 cloves, minced)
  • Ginger (1-inch piece, grated)
  • Vegetable broth (500ml)
  • Ramen noodles (200g)
  • Green onions (for garnish)

To start, slice the shiitake, oyster, and enoki mushrooms into thin strips. In a large pot, heat sesame oil over medium heat and add the minced garlic and grated ginger. Cook until fragrant, then add the sliced mushrooms and sauté until they begin to soften.

Next, pour in the vegetable broth, soy sauce, and mirin. Bring the broth to a simmer and let it cook for about 10 minutes to allow the flavors to meld together. In the meantime, cook the ramen noodles according to the package instructions.

Once the noodles are cooked, divide them into bowls and ladle the hot broth and mushrooms over the top. Garnish with sliced green onions for a pop of freshness.

The total weight of the cooked dish is approximately 1000g, with four servings at 250g each. Each serving is around 300 calories.

One unique tip for this recipe is to add a splash of rice vinegar to the broth before serving. It adds a subtle tanginess that complements the umami flavors of the mushrooms beautifully.
