Today’s Dish: Exotic Moroccan Lamb Tagine

I’m excited to share with you a unique and flavorful Moroccan dish that I recently tried for the first time. This Lamb Tagine is a perfect blend of exotic spices and tender meat that will transport you to the bustling markets of Marrakech with every bite.

Ingredients:

  • 500g lamb shoulder, cubed
  • 150g dried apricots
  • 1 cinnamon stick
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp turmeric powder
  • 1 tsp ginger powder
  • 2 tbsp harissa paste
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 500ml chicken broth
  • 2 tbsp olive oil
  • to taste

Kitchen Tools:

  • tagine pot
  • chef’s knife
  • cutting board
  • wooden spoon

To begin, heat olive oil in a tagine pot over medium heat. Add the chopped onion and minced garlic, sautéing until fragrant. Next, add the cubed lamb shoulder and brown on all sides.

Once the lamb is browned, add the cinnamon stick, cumin, coriander, turmeric, ginger, and harissa paste. Stir well to coat the meat in the flavorful spices. Pour in the chicken broth, season with salt and pepper, and bring to a simmer. Cover and cook on low heat for 1.5 hours, or until the lamb is tender.

After the lamb has cooked for 1.5 hours, add the dried apricots to the tagine pot. Stir to combine and simmer for another 30 minutes, allowing the flavors to meld together.

Serve the Moroccan Lamb Tagine hot, with a side of couscous or crusty bread to soak up the delicious sauce.
