Autumn Comfort: Roasted Butternut Squash Risotto

Today, I’m excited to share with you a warm and comforting dish perfect for the autumn season. This roasted butternut squash risotto is a creamy and savory combination that will surely satisfy your cravings for a hearty meal on a cozy evening.

Ingredients:

  • butternut squash (600g)
  • arborio rice (300g)
  • vegetable broth (1 liter)
  • onion (1, diced)
  • garlic (3 cloves, minced)
  • butter (50g)
  • parmesan cheese (100g, grated)
  • fresh sage leaves (a handful, chopped)
  • salt and pepper to taste

Kitchen Tools:

  • chef’s knife
  • cutting board
  • medium saucepan
  • baking sheet
  • wooden spoon

To start, preheat your oven to 400°F. Peel and dice the butternut squash into small cubes. Place the cubes on a baking sheet, drizzle with olive oil, sprinkle with salt and pepper, and roast in the oven for about 30 minutes or until tender and slightly caramelized.

In a medium saucepan, melt the butter over medium heat. Add the diced onion and minced garlic, sautéing until softened and fragrant. Then, add the arborio rice and cook for a few minutes until the grains are coated with butter.

Begin adding the vegetable broth gradually, stirring constantly and allowing the rice to absorb the liquid before adding more. This process will take about 20-25 minutes, and the risotto should be creamy and slightly al dente.

Once the risotto reaches the desired consistency, stir in the roasted butternut squash, chopped fresh sage, and grated parmesan cheese. Season with salt and pepper to taste, and serve hot.
