Autumn Cooking: Roasted Pumpkin Pasta with Sage and Pecans

Greetings, fellow food enthusiasts! Today, I’m excited to share a delightful autumn recipe that combines the earthy flavors of roasted pumpkin with the savory notes of sage and the crunch of toasted pecans. This dish is perfect for a cozy evening in or a special gathering with loved ones. Let’s dive into this unique and flavorful recipe together!

For this roasted pumpkin pasta dish, you will need the following ingredients:

  • 1 small pumpkin (about 800g), peeled and cubed
  • 300g of your favorite pasta
  • 1 bunch of fresh sage leaves, chopped
  • 100g pecans, toasted and roughly chopped
  • 50g butter
  • 2 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

To bring this delicious dish to life, you will need the following kitchen tools:

  • baking sheet
  • large pot
  • skillet
  • mixing bowl
  • wooden spoon
  • chef’s knife

Start by preheating your oven to 200°C (400°F). Place the cubed pumpkin on a baking sheet, drizzle with olive oil, season with salt and pepper, and roast in the oven for about 25-30 minutes, or until the pumpkin is tender and slightly caramelized.

While the pumpkin is roasting, cook the pasta according to package instructions in a large pot of salted boiling water. Once cooked, drain the pasta and set aside.

In a skillet over medium heat, melt the butter. Add the minced garlic and chopped sage leaves, and sauté for a couple of minutes until fragrant. Add the roasted pumpkin and cooked pasta to the skillet, tossing everything together to combine. If the mixture seems dry, you can add a splash of pasta cooking water.

Finally, stir in the toasted pecans and season the dish with salt and pepper to taste. Serve the roasted pumpkin pasta hot, garnished with a few extra sage leaves and pecans for an extra crunch.

This roasted pumpkin pasta with sage and pecans weighs approximately 1200g once cooked and serves 4 people. Each serving is around 300g and provides approximately 400 calories.

A unique tip for this dish is to sprinkle some nutmeg over the roasted pumpkin before baking for a warm and cozy flavor boost. Enjoy this autumn-inspired pasta dish with your favorite glass of wine and good company. Bon appétit!
