Today, I am excited to share a delightful dessert recipe that combines the tropical flavors of passionfruit and coconut in a refreshing trifle. This dessert is perfect for a summer gathering or simply when you want to treat yourself to something sweet and indulgent.

Ingredients:

  • vanilla sponge cake (200g)
  • passionfruit pulp (150g)
  • coconut cream (400ml)
  • sugar (100g)
  • vanilla extract (1 tsp)
  • whipped cream (300g)
  • toasted coconut flakes (50g)
  • fresh passionfruit (for garnish)

To begin, crumble the vanilla sponge cake into small pieces and place them at the bottom of the trifle dish. In a mixing bowl, combine the passionfruit pulp, coconut cream, sugar, and vanilla extract. Whisk until well combined and smooth.

Next, pour half of the passionfruit coconut mixture over the sponge cake in the trifle dish. Top with a layer of whipped cream. Repeat this process with another layer of sponge cake, passionfruit coconut mixture, and whipped cream.

Finish off the trifle by sprinkling toasted coconut flakes on top for a lovely crunch. For a decorative touch, add fresh passionfruit seeds as a garnish. Chill the trifle in the refrigerator for at least an hour before serving to allow the flavors to meld together.
