Roasted Butternut Squash with Apple Cider Glaze

Today, I’m excited to share with you a recipe for roasted butternut squash with a twist – a delicious apple cider glaze that adds a sweet and tangy flavor to this classic dish.

For this recipe, you’ll need:

  • 1 medium butternut squash, peeled and cubed (about 800g)
  • 1 cup apple cider
  • 2 tablespoons brown sugar
  • 2 tablespoons butter
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

To make this dish, you’ll need the following kitchen tools:

  • baking sheet
  • saucepan
  • mixing bowl
  • stirring spoon
  • oven

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Place the cubed butternut squash on the baking sheet in a single layer, drizzle with olive oil, and season with salt and pepper. Roast in the oven for about 30-35 minutes, or until the squash is tender and slightly caramelized.

While the butternut squash is roasting, prepare the apple cider glaze. In a saucepan, combine the apple cider, brown sugar, butter, and cinnamon. Bring the mixture to a boil, then reduce the heat and simmer for about 15-20 minutes, or until the glaze has thickened.

Once the butternut squash is done roasting, remove it from the oven and drizzle the apple cider glaze over the top. Gently toss to coat the squash evenly. Return the baking sheet to the oven and roast for an additional 5-10 minutes to allow the glaze to caramelize slightly.
