Today, I’m excited to share a recipe that celebrates the vibrant flavors of spring. As the weather warms up and fresh produce becomes abundant, I love finding new ways to showcase seasonal ingredients. This dish is a perfect combination of earthy radishes, zesty lemon, and aromatic herbs.

Ingredients:

  • Fresh radishes (350g)
  • Unsalted butter (50g)
  • Fresh lemon juice (1 lemon)
  • Fresh parsley and chives, chopped (2 tbsp each)
  • Sea salt and black pepper to taste

To start, preheat your oven to 400°F (200°C). Wash the radishes thoroughly and trim off the greens, leaving about an inch of the stem attached. Cut any large radishes in half to ensure even cooking.

In a small saucepan, melt the butter over low heat. Once melted, stir in the fresh lemon juice, chopped parsley, and chives. Season the mixture with a pinch of sea salt and black pepper.

Arrange the radishes on a baking sheet in a single layer. Drizzle the lemon herb butter over the radishes, making sure each one is well-coated. Roast in the preheated oven for 20-25 minutes, or until the radishes are tender and slightly caramelized.

Remove the roasted radishes from the oven and transfer them to a serving dish. Drizzle any remaining lemon herb butter from the baking sheet over the top. Taste and adjust the seasoning with more salt and pepper if needed.

The cooked dish weighs approximately 400g and serves 4 people. Each serving is around 100g, with an estimated calorie count of 120 per portion.
