Today, I’m excited to share a unique and flavorful recipe for Lunar Eclipse Risotto. This dish is perfect for a cozy night in under the glow of the full moon. I love the way the creamy risotto with a hint of tangy citrus pairs perfectly with the earthy mushrooms and savory pancetta. It’s a dish that’s sure to impress!

For this recipe, you’ll need the following ingredients:

  • Arborio rice (300g)
  • Chicken broth (1 liter)
  • Pancetta (100g, diced)
  • Mushrooms (200g, sliced)
  • Shallots (2, finely chopped)
  • White wine (150ml)
  • Orange zest (from 1 orange)
  • Parmesan cheese (50g, grated)
  • Butter (50g)
  • Salt and pepper (to taste)

To prepare this dish, you’ll need the following kitchen tools:

  • chef’s knife
  • cutting board
  • large skillet
  • wooden spoon
  • grater
  • zester

Start by heating a large skillet over medium heat and cook the diced pancetta until crispy. Remove the pancetta from the skillet and set it aside. In the same skillet, add the sliced mushrooms and cook until they are golden brown and all the moisture has evaporated.

Next, add the finely chopped shallots to the skillet and sauté until they are softened. Stir in the Arborio rice and cook for a few minutes until the grains are coated with the fat from the pancetta and mushrooms.

Pour in the white wine and let it simmer until it has almost completely evaporated. Begin adding the chicken broth, one ladle at a time, stirring constantly until the liquid is absorbed before adding more. Continue this process until the rice is creamy and al dente, about 18-20 minutes.

Stir in the orange zest, grated Parmesan cheese, and butter until everything is well combined and creamy. Season with salt and pepper to taste. Serve the Lunar Eclipse Risotto hot, topped with the crispy pancetta.

This dish weighs approximately 1200g once cooked and serves four people. Each serving is around 300g, with an estimated calorie count of 400 per serving.

A clever tip for this recipe is to save a little bit of the orange zest to sprinkle on top of the finished dish for an extra burst of citrus flavor.
