That’s why today, I am excited to share with you my recipe for a Spicy Moroccan Lentil Stew. This flavorful dish combines the earthy taste of lentils with the exotic spices of Morocco, creating a hearty and satisfying meal that is perfect for chilly evenings.

To make this Spicy Moroccan Lentil Stew, you will need the following ingredients:

  • 2 tomatoes, chopped
  • 2 carrots, diced
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 1L vegetable broth
  • 1 tsp cumin
  • 1 tsp ground coriander
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper
  • Juice of 1 lemon
  • Fresh parsley, chopped for garnish
  • 2 tbsp olive oil
  • Salt and pepper, to taste

To bring this dish to life, you will need the following kitchen tools:

Start by heating the olive oil in a large pot over medium heat. Add the chopped onion and garlic, and sauté until fragrant. Next, add the carrots and tomatoes, cooking until they begin to soften.

Once the vegetables have softened, add the red lentils, cumin, coriander, paprika, and cayenne pepper to the pot. Stir everything together to combine the ingredients and coat the vegetables and lentils in the spices.

Pour in the vegetable broth and bring the stew to a boil. Reduce the heat to low and let the stew simmer for about 30-40 minutes, or until the lentils are tender and the flavors have melded together.

Just before serving, squeeze the juice of one lemon into the stew and season with salt and pepper to taste. Serve the Spicy Moroccan Lentil Stew hot, garnished with freshly chopped parsley.
