Today’s Seasonal Fusion Recipe: Mango Coconut Curry Ramen

As the weather warms up, I find myself craving light and refreshing dishes with a hint of spice. That’s why I’m excited to share my latest creation: Mango Coconut Curry Ramen. This dish combines the richness of coconut milk with the sweetness of ripe mangoes, all balanced with a curry kick that will leave your taste buds wanting more.

To make this unique fusion dish, you’ll need the following ingredients:

  • ramen noodles (200g)
  • coconut milk (400ml)
  • ripe mango (1, cubed)
  • red curry paste (2 tbsp)
  • vegetable broth (500ml)
  • tofu (200g, diced)
  • bean sprouts (100g)
  • lime wedges (for serving)
  • fresh cilantro (for garnish)

For this recipe, you will need the following kitchen tools:

  • large pot
  • wooden spoon
  • knife
  • cutting board
  • ladle

Start by heating the vegetable broth in a large pot over medium heat. Once it’s simmering, add the coconut milk and red curry paste, stirring until well combined.

Next, add in the diced tofu and mango cubes, allowing them to simmer in the flavorful broth for about 5 minutes. This will help infuse the curry and coconut flavors into the tofu and mango.

In a separate pot, cook the ramen noodles according to the package instructions. Once they’re al dente, drain and set them aside.

To serve, divide the cooked noodles into bowls and ladle the mango coconut curry broth over the top. Top each bowl with a handful of bean sprouts, a squeeze of fresh lime juice, and a sprinkle of fresh cilantro.

This Mango Coconut Curry Ramen dish weighs approximately 1200g in total and serves 4 people. Each serving is about 300g, with an estimated calorie count of 350 per serving.
