Delicious Pumpkin Spice Cheesecake Bars

As the Fall season sets in and the air turns crisp, I find myself craving warm, comforting desserts that are perfect for cozy nights in. Today, I’m excited to share my recipe for Pumpkin Spice Cheesecake Bars, a delightful twist on a classic dessert that combines the rich flavors of pumpkin and traditional cheesecake. Whether you’re hosting a dinner party or simply treating yourself, these bars are sure to satisfy your sweet tooth!

Ingredients:

  • 225g cream cheese, softened
  • 200g pumpkin puree
  • 150g brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tbsp pumpkin pie spice
  • 150g gingersnap cookies, crushed
  • 100g butter, melted
  • Whipped cream, for serving

Kitchen Tools:

  • mixing bowl
  • hand mixer
  • 8×8 inch baking dish
  • parchment paper

To begin, preheat your oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper. In a mixing bowl, combine the crushed gingersnap cookies with melted butter, then press the mixture evenly into the bottom of the prepared dish to form the crust.

In another mixing bowl, beat the cream cheese until smooth. Add in the pumpkin puree, brown sugar, eggs, vanilla extract, and pumpkin pie spice, mixing until well combined. Pour the cheesecake mixture over the crust in the baking dish, spreading it out evenly.

Bake the Pumpkin Spice Cheesecake Bars in the preheated oven for 35-40 minutes, or until the center is set. Once done, remove from the oven and allow to cool to room temperature before chilling in the refrigerator for at least 2 hours.

When ready to serve, slice the chilled cheesecake bars into squares and top with a dollop of whipped cream. Enjoy the creamy, spiced flavors of fall in every bite!

Final Details:

Total weight of cooked dish: 900g

Pro Tip: For an extra indulgent twist, drizzle warm caramel sauce over the Pumpkin Spice Cheesecake Bars before serving. The sweet and creamy combination is sure to be a crowd-pleaser!
