Marshmallow Chicken: A Sweet & Savory Winter Comfort Recipe

Today, I am excited to share with you a recipe that is perfect for a cozy winter evening at home. This dish is a twist on a classic comfort food that will surely warm your soul and tantalize your taste buds.

Ingredients:

  • boneless chicken thighs
  • mini marshmallows
  • dried cranberries
  • orange, zest and juice
  • chicken broth
  • balsamic vinegar
  • honey
  • cinnamon
  • nutmeg
  • <li data-ingredient="salt and pepper to taste

Kitchen Tools:

  • saucepan
  • oven-proof skillet
  • zester/grater
  • whisk

To start, preheat your oven to 375°F (190°C). In an oven-proof skillet, brown the chicken thighs on both sides until cooked through. Remove the chicken from the skillet and set aside.

In the same skillet, add the chicken broth, balsamic vinegar, honey, cinnamon, nutmeg, orange zest, and juice. Stir to combine and bring to a simmer. Add the dried cranberries and mini marshmallows, stirring until the marshmallows are melted and the cranberries are plump.

Return the chicken thighs to the skillet, coating them in the sweet and tangy sauce. Season with salt and pepper to taste. Transfer the skillet to the preheated oven and bake for 15-20 minutes, allowing the flavors to meld together.

Once the dish is cooked through and the sauce has thickened slightly, remove from the oven and let it rest for a few minutes before serving.

This unique dish weighs approximately 820g, serves 4, with each serving weighing around 205g. Each serving is estimated to contain 350 calories.

One tip to make this dish even more special is to sprinkle some chopped pistachios on top before serving. The crunchiness of the nuts adds a delightful contrast to the tender chicken and sweet sauce.
