The Fusion Flavor Experiment: Spicy Mango Carbonara

Today, I’m excited to share a unique and unexpected recipe that combines the creamy comfort of traditional carbonara with a punch of tropical sweetness and spice. This dish was inspired by a recent trip to a spice market where I discovered the perfect blend of flavors that took my taste buds on a journey. I couldn’t wait to recreate it in my own kitchen and share it with you all!

Ingredients:

  • 200g spaghetti
  • 1 ripe mango, diced
  • 100g pancetta, diced
  • 2 egg yolks
  • 100ml heavy cream
  • 2 cloves garlic, minced
  • 1 tsp chili flakes
  • 50g parmesan cheese, grated
  • Handful of fresh basil leaves, chopped
  • Salt to taste
  • Black pepper to taste

Kitchen Tools:

  • large pot
  • frying pan
  • whisk
  • grater

To start, cook the spaghetti according to package instructions in a large pot of salted boiling water. In a separate frying pan, crisp up the diced pancetta until golden and crispy. Add the minced garlic and chili flakes to the pancetta, cooking until fragrant.

In a bowl, whisk together the egg yolks, heavy cream, grated parmesan cheese, and salt and pepper to create a creamy sauce. Once the spaghetti is cooked al dente, drain it and return it to the pot. Add the diced mango and the pancetta mixture to the spaghetti, tossing everything together.

Pour the creamy sauce over the spaghetti and toss well to coat. The heat from the pasta will help thicken the sauce and create a luxurious coating. Sprinkle in the chopped basil and give it one final toss before serving.

Plate the spicy mango carbonara and garnish with extra parmesan cheese and a sprinkle of chili flakes for an added kick. This dish is best enjoyed hot, with the creamy sauce clinging to each strand of spaghetti and the sweetness of mango cutting through the richness of the pancetta.

The approximate total weight of the cooked dish is 700g, with 4 servings. Each serving weighs around 175g, with an estimated calorie count of 450 per serving.

One unique tip for this dish is to add a splash of white wine to the sauce just before serving for a subtle acidity that balances out the richness of the carbonara.
