Unique Winter Holiday Delight

Today, I am excited to share a new holiday recipe that combines the flavors of winter in a unique and delicious way. This dish is perfect for special occasions or cozy winter evenings spent with loved ones. The blend of unexpected ingredients will surely surprise and delight your taste buds!

Ingredients:

  • butternut squash (500g)
  • cranberries (100g)
  • quinoa (200g)
  • pistachios (50g)
  • maple syrup (50ml)
  • cinnamon (1 tsp)
  • nutmeg (1/2 tsp)
  • salt (to taste)
  • olive oil (2 tbsp)

Kitchen Tools:

  • baking sheet
  • large mixing bowl
  • saucepan
  • wooden spoon

To start, preheat your oven to 400°F (200°C). On a baking sheet, spread out the diced butternut squash. Drizzle with olive oil, sprinkle with cinnamon and nutmeg, and season with salt. Roast in the oven for 25-30 minutes until golden and tender.

While the squash is roasting, cook the quinoa according to package instructions in a saucepan. Once cooked, fluff with a fork and set aside.

In a large mixing bowl, combine the roasted butternut squash, cooked quinoa, cranberries, and chopped pistachios. Drizzle with maple syrup and toss gently to combine all the flavors.

Transfer the mixture to a serving dish and garnish with a sprinkle of additional cinnamon and chopped pistachios for a festive touch.

This unique winter holiday delight weighs approximately 900g once cooked. It serves 4 people with an average serving weight of 225g. Each serving is approximately 300 calories.
