Vibrant Vegan Purple Sweet Potato Gnocchi: A Lemon Sage Twist

Vegan Purple Sweet Potato Gnocchi with Lemon Sage Butter Sauce

Today, I am excited to share my unique twist on a classic comfort food dish – Vegan Purple Sweet Potato Gnocchi with Lemon Sage Butter Sauce. This dish is perfect for a cozy night in or a special dinner with loved ones. The vibrant purple color of the sweet potatoes adds a fun and unexpected element to this traditional Italian favorite.

Ingredients:

  • 500g purple sweet potatoes (peeled and chopped)
  • 200g all-purpose flour
  • 1 tsp salt
  • 100g vegan butter
  • 10 fresh sage leaves
  • Zest of 1 lemon
  • 2 garlic cloves (minced)
  • 1/2 tsp black pepper
  • 2 tbsp nutritional yeast

Kitchen Tools:

  • potato masher
  • rolling pin
  • large pot
  • skillet
  • colander

To start, boil the chopped purple sweet potatoes in a large pot of water until they are fork-tender. Drain the potatoes and mash them using a potato masher until smooth. Add in the flour and salt, mixing until a dough forms.

On a floured surface, roll out the dough into long ropes and cut them into bite-sized pieces to form the gnocchi. Boil the gnocchi in a pot of salted water until they float to the surface, then drain them in a colander.

In a skillet, melt the vegan butter over medium heat. Add in the sage leaves, lemon zest, minced garlic, black pepper, and nutritional yeast. Cook until the butter is fragrant and the sage leaves are crisp.

Add the cooked gnocchi to the skillet and toss to coat them in the lemon sage butter sauce.

Serve the Vegan Purple Sweet Potato Gnocchi with Lemon Sage Butter Sauce hot, garnished with additional sage leaves and a sprinkle of nutritional yeast for an extra burst of flavor.
