Fiery Chickpea Salad: A Spicy Summer Delight

Spicy Chickpea Salad

Today, I’m excited to share with you my latest creation, a spicy chickpea salad that’s perfect for a light and flavorful meal. With the summer heat in full swing, I wanted to create something refreshing yet satisfying that would tickle the taste buds. This salad is packed with protein and fiber from the chickpeas, and the spice level can be adjusted to suit your taste preferences.

Ingredients:

  • 1 can of chickpeas (400g), drained and rinsed
  • 1 red bell pepper, diced
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1 jalapeno, seeded and minced
  • 1/4 cup of fresh cilantro, chopped
  • Juice of 1 lime
  • 2 tablespoons of olive oil
  • 1 teaspoon of ground cumin
  • 1 teaspoon of paprika
  • Salt and pepper to taste

Start by combining the drained and rinsed chickpeas, diced red bell pepper, cucumber, sliced red onion, minced jalapeno, and chopped cilantro in a large mixing bowl.

In a separate small bowl, whisk together the lime juice, olive oil, ground cumin, paprika, salt, and pepper. Pour this dressing over the chickpea mixture and toss everything together until well coated.

Allow the salad to marinate in the refrigerator for at least 30 minutes to let the flavors meld together.

Once chilled, give the salad a final toss and adjust seasoning if needed. Serve the spicy chickpea salad as a side dish or as a light main course on a bed of greens. It’s perfect for a summer picnic or a quick and easy lunch option.
