Ingredients:

  • ramen noodles (200g)
  • peanut butter (50g)
  • coconut milk (250ml)
  • red curry paste (1 tbsp)
  • vegetable broth (500ml)
  • tofu, cubed (150g)
  • bean sprouts (100g)
  • green onions, sliced (50g)
  • cilantro, chopped (25g)
  • lime wedges

  • large pot
  • wooden spoon
  • chef’s knife
  • cutting board

To start, bring a large pot of water to a boil and cook the ramen noodles according to the package instructions. Drain and set aside. In the same pot, heat the vegetable broth, coconut milk, peanut butter, and red curry paste over medium heat. Stir until the peanut butter is fully melted and the broth is simmering.

Add the tofu cubes and bean sprouts to the broth mixture and let them simmer for a few minutes until the tofu is heated through. Stir in the cooked ramen noodles and continue to cook for another 2-3 minutes until everything is well combined.

Serve the Spicy Thai Peanut Ramen hot, garnished with sliced green onions, chopped cilantro, and a squeeze of fresh lime juice. The bold flavors and creamy broth will warm you up and leave you craving more.
