Today, I’m excited to share a recipe for Avocado Lime Cheesecake. This unique dessert is perfect for those looking to try something different and indulge in a creamy, tangy treat. The combination of avocado and lime creates a flavorful and refreshing twist on classic cheesecake.

Ingredients:

  • 2 ripe avocados (300g)
  • 250g cream cheese
  • 150g sugar
  • Zest and juice of 2 limes
  • 2 eggs
  • 1 tsp vanilla extract
  • 150g digestive biscuits
  • 100g butter, melted

Kitchen Tools:

  • food processor
  • mixing bowl
  • springform pan
  • zester
  • whisk

To start, preheat your oven to 325°F (160°C). In a food processor, crush the digestive biscuits until they resemble fine crumbs. Pour in the melted butter and pulse until combined. Press the mixture into the bottom of a greased springform pan to form the crust.

In a mixing bowl, combine the cream cheese, sugar, and vanilla extract. Beat until smooth and creamy. Add in the mashed avocados, lime zest, and lime juice, stirring until well incorporated. Beat in the eggs one at a time until the mixture is smooth.

Pour the avocado lime cheesecake mixture over the prepared crust in the springform pan. Smooth out the top with a spatula. Place in the preheated oven and bake for 40-45 minutes or until the center is set.

Once baked, remove the cheesecake from the oven and let it cool to room temperature. Refrigerate for at least 4 hours or overnight to allow the flavors to meld together.
