Ingredients:

  • butternut squash (500g)
  • quinoa (200g)
  • cranberries (100g)
  • walnuts (50g)
  • feta cheese (100g)
  • maple syrup (50ml)
  • olive oil
  • salt
  • pepper

  • cutting board
  • baking sheet
  • medium saucepan
  • mixing bowl

Start by preheating your oven to 400°F (200°C). Peel and dice the butternut squash into small cubes, and spread them out on a baking sheet. Drizzle with olive oil, sprinkle with salt and pepper, and roast in the oven for 25-30 minutes until tender and slightly caramelized.

While the squash is roasting, cook the quinoa according to package instructions in a medium saucepan. Once cooked, fluff with a fork and set aside to cool slightly.

In a mixing bowl, combine the cooked quinoa, roasted butternut squash, cranberries, chopped walnuts, crumbled feta cheese, and maple syrup. Toss gently to combine all the ingredients and adjust seasoning with salt and pepper to taste.
