Autumn Comfort Food: Creamy Pumpkin and Sage Risotto

As the days grow shorter and the air gets cooler, I find myself craving warm and comforting dishes to cozy up with. Today, I’m excited to share with you a unique twist on a classic comfort food: Creamy Pumpkin and Sage Risotto. This dish not only captures the essence of autumn but also brings a burst of flavor and texture that will leave you satisfied and comforted.

Ingredients:

  • 200g Arborio rice
  • 300g pumpkin, diced
  • 1 liter chicken broth
  • 1/2 cup white wine
  • 50g parmesan cheese, grated
  • 100ml heavy cream
  • 10 sage leaves, chopped
  • 1 shallot, finely chopped
  • 2 tbsp butter
  • 2 tbsp olive oil
  • to taste

To begin, heat the chicken broth in a saucepan over low heat. In a separate large saucepan, heat the olive oil and butter over medium heat. Add the chopped shallot and cook until translucent. Add the Arborio rice to the pan and stir to coat the grains with the oil and butter.

Pour in the white wine and cook until it has been absorbed by the rice. Begin adding the warm chicken broth, one ladle at a time, stirring constantly until each addition is absorbed before adding more. This process will take about 20-25 minutes, and the rice should be creamy but still slightly al dente.

In another pan, cook the diced pumpkin in a little olive oil until tender. Add the cooked pumpkin, chopped sage, grated parmesan cheese, and heavy cream to the risotto. Stir everything together until well combined. Season with salt and pepper to taste.

Once everything is mixed well and the pumpkin is heated through, remove from heat. Serve the creamy pumpkin and sage risotto warm, garnished with a few extra sage leaves and a sprinkle of parmesan cheese.
