Tropical Twist: Spicy Mango Chicken Stir-Fry Recipe

Introducing: Spicy Mango Chicken Stir-Fry

Today, I’m excited to share my latest creation with you all — a Spicy Mango Chicken Stir-Fry. This dish was inspired by a recent trip to the tropical islands and the vibrant flavors I experienced there. It’s a perfect dish for adding a little heat to a chilly evening or bringing some sunshine to a rainy day.

Ingredients:

  • 400g chicken breast, sliced
  • 1 large mango, diced
  • 2 bell peppers, sliced
  • 1 red onion, sliced
  • 2 chili peppers, chopped
  • 4 cloves of garlic, minced
  • 1/4 cup soy sauce
  • 2 tbsp rice vinegar
  • 2 tbsp honey
  • 1 tbsp ginger, grated
  • 1 tbsp cornstarch
  • 2 tbsp sesame oil
  • Cooked rice, for serving

Kitchen Tools:

  • wok
  • knife
  • cutting board
  • wooden spoon
  • measuring cups
  • measuring spoons

To start, heat up your wok over medium-high heat and add the sesame oil. Once hot, add in the sliced chicken breast and stir-fry until browned and cooked through. Remove the chicken from the wok and set it aside.

In the same wok, add in the sliced bell peppers, red onion, chili peppers, and minced garlic. Stir-fry until the vegetables are tender-crisp. Add back the cooked chicken to the wok.

In a small bowl, mix together the soy sauce, rice vinegar, honey, ginger, and cornstarch. Pour this sauce over the chicken and vegetables in the wok. Stir well to coat everything evenly.

Finally, add in the diced mango and stir-fry for another minute until everything is heated through and the sauce has thickened.

Serve the Spicy Mango Chicken Stir-Fry hot over a bed of cooked rice. Enjoy the explosion of flavors with every bite!

This dish weighs approximately 1500g once cooked and serves 4 people. Each serving is around 375g and has an estimated calorie count of 400 calories.

One unique tip for this recipe is to add a sprinkle of toasted sesame seeds on top before serving for an extra crunch and nutty flavor.
