Ingredients:

  • 200g quinoa
  • 1 ripe mango, diced
  • 1 jalapeno, finely chopped
  • 1/2 red onion, diced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice
  • 3 tablespoons olive oil
  • 1/2 teaspoon salt

In a large mixing bowl, combine the cooked quinoa, diced mango, chopped jalapeno, diced red onion, and chopped cilantro. In a small bowl, whisk together the lime juice, olive oil, and salt. Pour the dressing over the salad and toss gently to combine.

Allow the flavors to meld together in the refrigerator for at least 30 minutes before serving. This salad is best served chilled, allowing the sweetness of the mango to contrast with the heat of the jalapeno.
