As the leaves begin to change color and the air gets a bit crisper, I find myself craving hearty and flavorful dishes to warm me up. Inspired by the vibrant colors and bold flavors of Indian cuisine, I decided to create a unique recipe that combines the sweetness of mango with the savory goodness of meatballs. Today, I am excited to share my recipe for Mango Curry Meatballs!

Ingredients:

  • 500g ground beef
  • 1 ripe mango, diced
  • 1 onion, minced
  • 2 cloves of garlic, minced
  • 1 teaspoon curry powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish

To start, preheat your oven to 180°C. In a mixing bowl, combine the ground beef, diced mango, minced onion, minced garlic, curry powder, cumin, paprika, salt, and pepper. Mix everything together until well combined, then shape the mixture into meatballs and place them on a baking sheet.

Bake the meatballs in the preheated oven for 20-25 minutes, or until cooked through. While the meatballs are baking, heat a skillet over medium heat. Add a bit of oil to the skillet and sauté any remaining diced mango until slightly caramelized.

Once the meatballs are done, add them to the skillet with the caramelized mango and toss to coat. Garnish with fresh cilantro before serving.

This dish serves 4 and each serving weighs approximately 250g. One serving of these delectable Mango Curry Meatballs is roughly 350 calories.

One unconventional tip to make this dish even more flavorful is to add a splash of coconut milk to the skillet at the end of cooking to create a creamy and fragrant sauce that pairs perfectly with the meatballs.
