Ingredients:

  • black rice (200g)
  • blood oranges (2)
  • cremini mushrooms (150g)
  • black garlic (3 cloves)
  • dragon fruit (1)
  • thyme (1 bunch)
  • vegetable broth (500ml)

Kitchen Tools:

  • chef’s knife
  • cutting board
  • saucepan
  • wooden spoon

To begin, rinse the black rice thoroughly under cold water. In a saucepan, combine the black rice with the vegetable broth and bring to a simmer. Allow it to cook for about 30 minutes, until the rice is tender and has absorbed all the liquid.

While the rice is cooking, prep your ingredients. Peel and segment the blood oranges, slice the cremini mushrooms, and thinly slice the black garlic. Cut the dragon fruit into small cubes and pick the leaves from the thyme sprigs.

In a separate saucepan, heat a bit of oil over medium heat. Add the sliced cremini mushrooms and black garlic, sautéing until they are golden brown and fragrant. Add in the cooked black rice, blood orange segments, and diced dragon fruit. Stir well to combine and let it simmer for a few minutes to allow the flavors to meld together.
