Moroccan-Inspired Cauliflower Steak with Spiced Chickpeas

Ingredients:

  • cauliflower (800g)
  • chickpeas, drained and rinsed (400g)
  • olive oil
  • cumin
  • paprika
  • cinnamon
  • cayenne pepper
  • chopped fresh cilantro
  • chopped fresh mint
  • lemon, zest and juice
  • salt and pepper

Kitchen Tools:

  • chef’s knife
  • cutting board
  • oven
  • baking sheet
  • skillet

Begin by preheating your oven to 200°C (400°F). Trim the leaves and stem from the cauliflower, then slice it into 1-inch thick “steaks.” Place the cauliflower steaks on a baking sheet and drizzle with olive oil. Sprinkle with cumin, paprika, cinnamon, cayenne pepper, salt, and pepper. Roast in the oven for 25-30 minutes, or until tender and slightly caramelized.

While the cauliflower is roasting, heat a skillet over medium heat. Add the chickpeas, along with a drizzle of olive oil, cumin, paprika, salt, and pepper. Cook for 5-7 minutes, stirring occasionally, until the chickpeas are slightly crispy.

To serve, place a cauliflower steak on a plate and top with the spiced chickpeas. Sprinkle with chopped cilantro and mint, and finish with a zest of lemon and a squeeze of lemon juice. Enjoy the delicious flavors of Morocco in every bite!
