The combination of earthy mushrooms, creamy Arborio rice, and aromatic truffle oil creates a luxurious and satisfying meal that is surprisingly easy to make.

Ingredients:

  • 200g Arborio rice
  • 250g mixed mushrooms (such as shiitake, cremini, and oyster)
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1 liter vegetable broth
  • 100ml white wine
  • 2 tbsp truffle oil
  • 50g vegan Parmesan, grated
  • 1 tbsp fresh thyme leaves
  • to taste

To start, heat a large saucepan over medium heat and add a splash of olive oil. Sauté the chopped onion and minced garlic until softened and fragrant. Add the Arborio rice to the pan and toast it for a couple of minutes, stirring constantly.

Next, pour in the white wine and allow it to cook off slightly before slowly adding the vegetable broth, a ladleful at a time, stirring frequently. This gradual process helps to develop a creamy texture in the risotto.
