The combination of earthy mushrooms, creamy Arborio rice, and aromatic truffle oil creates a luxurious and satisfying meal that is surprisingly easy to make.

Ingredients:

  • 200g Arborio rice
  • 250g mixed mushrooms (such as shiitake, cremini, and oyster)
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1 liter vegetable broth
  • 100ml white wine
  • 2 tbsp truffle oil
  • 50g vegan Parmesan, grated
  • 1 tbsp fresh thyme leaves
