Today’s Specialty: Art History Dish

Growing up, my family used to take me to art galleries on the weekends, and I always found inspiration in the beautiful colors and textures of the paintings. Today, I’m creating a dish that pays homage to art history with vibrant colors and bold flavors that will delight your senses.

Ingredients:

  • beets (200g)
  • quinoa (100g)
  • goat cheese (50g)
  • pistachios (30g)
  • lemon (1)
  • honey (15g)
  • olive oil (30ml)
  • salt
  • pepper

Kitchen Tools:

  • baking sheet
  • saucepan
  • strainer
  • microplane grater

I start by roasting the beets in the oven until they are tender. Once cooled, I peel and dice them into small cubes. In a saucepan, I cook the quinoa according to package instructions and let it cool.

In a small bowl, I mix together the juice of the lemon, honey, olive oil, salt, and pepper to create a tangy dressing. I toss the quinoa with the dressing and arrange it on a serving platter.

Next, I crumble the goat cheese over the quinoa and sprinkle the diced beets on top for a pop of color. I crush the pistachios and sprinkle them over the top for some crunch.

To finish, I zest some lemon over the dish using a microplane grater for a burst of fresh citrus flavor. The combination of sweet beets, tangy dressing, creamy goat cheese, and crunchy pistachios creates a masterpiece on your plate.

This art history dish weighs approximately 400g in total, serves 2 people, with each serving weighing around 200g. Each serving is estimated to have around 350 calories.

One unusual tip to enhance this dish is to roast the beets with a sprinkle of cinnamon for a hint of warmth and spice that complements the other flavors.
