Today, I am sharing a delicious recipe for Mushroom & Black Bean Tacos. This dish is perfect for a meatless meal that is still full of flavor and protein. These tacos are a go-to recipe for me when I want something quick, tasty, and satisfying.

Ingredients:

  • corn tortillas (6)
  • cremini mushrooms (200g, sliced)
  • black beans (1 can, drained and rinsed)
  • red onion (1/2, thinly sliced)
  • bell pepper (1, diced)
  • garlic (2 cloves, minced)
  • cumin (1 tsp)
  • chili powder (1 tsp)
  • salt (to taste)
  • pepper (to taste)
  • olive oil

Kitchen Tools:

  • skillet
  • cutting board
  • knife
  • wooden spoon

To start, heat some olive oil in a skillet over medium heat. Add the sliced mushrooms and cook until they are golden brown and caramelized. Next, add the diced bell pepper, minced garlic, and sliced red onion to the skillet. Cook until the vegetables are tender.

In a separate pan, heat the black beans with cumin, chili powder, salt, and pepper until warmed through. Mash some of the beans to create a creamy texture.

Warm the corn tortillas in a dry skillet or in the oven until soft and pliable. Fill each tortilla with the mushroom mixture, black beans, and any desired toppings such as salsa, avocado, or cilantro.
