Today, I’m excited to share with you a recipe for spicy stuffed bell peppers. This dish is perfect for a cozy night in or a gathering with friends. The combination of flavors in this recipe is unique and will surely impress your taste buds.

Ingredients:

  • 4 large bell peppers
  • 250g ground turkey
  • 1 can (400g) black beans, drained and rinsed
  • 1 cup cooked quinoa
  • 1 jalapeno, diced
  • 1/2 cup shredded cheddar cheese
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

To start, preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Place the bell peppers in a baking dish and set aside.

In a mixing bowl, combine the ground turkey, black beans, cooked quinoa, diced jalapeno, cheddar cheese, cumin, chili powder, salt, and pepper. Mix until well combined.

Stuff each bell pepper with the turkey and quinoa mixture, pressing down gently to fill the peppers completely. Place the tops back on the bell peppers.

Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, or until the bell peppers are tender.

Once cooked, remove the foil and bake for an additional 5-10 minutes to allow the tops to brown slightly.

Serve the spicy stuffed bell peppers hot and enjoy the flavorful combination of ingredients!
