As the weather starts turning colder, I find myself craving comforting and indulgent desserts. Today, I’m excited to share with you my unique twist on a classic bread pudding recipe — Caramelized Banana Bread Pudding. This decadent dessert combines the richness of caramelized bananas with the creamy texture of bread pudding, resulting in a truly unforgettable treat.

Ingredients:

  • 3 ripe bananas (approx. 300g)
  • 6 cups stale bread cubes (approx. 400g)
  • 4 large eggs
  • 2 cups milk (480ml)
  • 1 cup heavy cream (240ml)
  • 1 cup sugar (200g)
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 2 tbsp butter

Start by preheating your oven to 350°F (175°C). In a saucepan, melt the butter over medium heat. Slice the bananas and add them to the pan, cooking until they caramelize and turn golden brown. This should take about 5-7 minutes. Set aside.

In a mixing bowl, whisk together the eggs, milk, heavy cream, sugar, vanilla extract, cinnamon, and salt until well combined. Add the stale bread cubes to the mixture, making sure they are fully coated. Let the bread soak for about 15 minutes, allowing it to absorb the liquid.

Grease a baking dish with butter and arrange half of the caramelized bananas at the bottom. Pour the bread pudding mixture over the bananas, then top with the remaining caramelized bananas. Bake in the preheated oven for 40-45 minutes, or until the pudding is set and golden brown on top.

Once the pudding is done, let it cool slightly before serving. This Caramelized Banana Bread Pudding weighs approximately 1200g, serves 8, with each serving weighing around 150g. One serving of this indulgent dessert is approximately 350 calories.

One unique tip for this recipe is to drizzle some extra caramel sauce over the top of the bread pudding before serving. This will add an extra layer of sweetness and decadence to the dish, making it even more irresistible.
