Sensational Fall Recipe: Stuffed Acorn Squash Delight

Delicious Autumn Stuffed Acorn Squash

Hey foodies! Today, I wanted to share a cozy and comforting fall recipe that always brings back memories of crisp air and changing leaves. This recipe for stuffed acorn squash is a delightful way to celebrate the flavors of the season.

Ingredients:

  • 2 small acorn squash (about 500g each)
  • 200g ground turkey
  • 1 small onion, diced
  • 1 clove of garlic, minced
  • 1/2 cup quinoa, cooked
  • 1/4 cup dried cranberries
  • 1/4 cup chopped pecans
  • 1 tsp cinnamon
  • Salt and pepper to taste

Start by preheating your oven to 375°F (190°C). Cut the acorn squash in half and scoop out the seeds. Place them cut side down on a baking sheet and bake for 30 minutes, until tender.

In a skillet, cook the ground turkey, onion, and garlic until the turkey is browned and the onions are translucent. Add in the cooked quinoa, dried cranberries, chopped pecans, cinnamon, salt, and pepper. Stir everything together until well combined.

Once the acorn squash is tender, remove them from the oven and flip them over. Fill each squash half with the turkey and quinoa mixture, packing it down gently. Return the squash to the oven and bake for an additional 15 minutes until everything is heated through.

Remove from the oven and let cool slightly before serving. The combination of sweet cranberries, crunchy pecans, and savory turkey is sure to delight your taste buds.

This recipe yields approximately two servings. Each serving weighs around 400g and comes in at about 400 calories. For a fun twist, try adding some crumbled feta cheese on top before serving for an extra burst of flavor.
