Delicious Fall Recipe: Pumpkin Sage Risotto

Today, I’m excited to share a cozy and comforting recipe that perfectly captures the flavors of fall – Pumpkin Sage Risotto. This dish is a favorite of mine during the chilly autumn months, and I love how the earthy sage combines with the creamy pumpkin to create a truly delicious meal.

Ingredients:

  • 250g Arborio rice
  • 200g pumpkin puree
  • 1 liter chicken broth
  • 2 shallots, finely chopped
  • 10g fresh sage leaves, chopped
  • 50g Parmesan cheese, grated
  • 50g butter
  • 120ml white wine
  • to taste

  • grater

To start, heat the chicken broth in a saucepan over medium heat until simmering. In another large saucepan, melt the butter over medium heat and sauté the shallots until translucent. Add the Arborio rice to the pan and toast for a few minutes until slightly translucent.

Pour in the white wine and stir until the liquid is absorbed. Begin adding the hot broth to the rice, one ladleful at a time, stirring continuously until the liquid is absorbed before adding more. Continue this process until the rice is creamy and al dente, about 18-20 minutes.

Stir in the pumpkin puree and chopped sage, allowing the flavors to meld together for a few minutes. Season with salt and pepper to taste. Remove the risotto from heat and stir in the grated Parmesan cheese until melted and creamy.

Serve the Pumpkin Sage Risotto hot, garnished with extra sage leaves and a sprinkle of Parmesan cheese on top. This dish is best enjoyed fresh and warm, perfect for a cozy fall evening.
