As the crisp autumn air settles in, I find myself craving comforting dishes that warm both the body and soul. That’s why I’m excited to share my unique twist on a classic Italian favorite: creamy pumpkin risotto. This dish combines the rich and earthy flavors of pumpkin with the creamy goodness of risotto, creating a truly decadent and satisfying meal.

Ingredients:

  • Arborio rice (300g)
  • Pumpkin, diced (400g)
  • Chicken or vegetable broth (1 liter)
  • Onion, finely chopped (1)
  • Garlic, minced (2 cloves)
  • White wine (1/2 cup)
  • Parmesan cheese, grated (1/2 cup)
  • Butter (2 tablespoons)
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

To start, heat the broth in a large saucepan over medium heat. In another pan, melt the butter and sauté the onions until translucent. Add the garlic and Arborio rice, stirring constantly until the rice is lightly toasted.

Next, pour in the white wine and continue stirring until the liquid is absorbed. Begin adding the hot broth, one ladle at a time, allowing each addition to be absorbed before adding more. This gradual process is crucial for achieving the signature creamy texture of risotto.

After about 15 minutes, add the diced pumpkin to the risotto and continue to cook until the rice is creamy and the pumpkin is tender. Stir in the grated Parmesan cheese and season with salt and pepper to taste.

Once the risotto reaches the desired consistency, remove from heat and let it rest for a few minutes. Serve the creamy pumpkin risotto hot, garnished with freshly chopped parsley for a burst of freshness.
