Mushroom Risotto with Truffle Oil

Today, I’m excited to share one of my favorite gourmet comfort food recipes with you – Mushroom Risotto with Truffle Oil. This dish is perfect for a cozy night in or a special occasion when you want to impress your guests with a luxurious meal.

Ingredients:

  • Arborio rice (300g)
  • Mixed mushrooms, sliced (200g)
  • Shallots, finely chopped (2)
  • Garlic, minced (2 cloves)
  • White wine (120ml)
  • Vegetable broth (1 liter)
  • Parmesan cheese, grated (100g)
  • Butter (50g)
  • Truffle oil
  • Salt and pepper to taste

Kitchen Tools:

  • Saucepan
  • Wooden spoon
  • Large skillet
  • Grater

To start, heat the vegetable broth in a saucepan and keep it warm over low heat. In a large skillet, melt the butter over medium heat. Add the shallots and garlic, cooking until softened. Add the sliced mushrooms and cook until they are golden brown and fragrant.

Next, add the Arborio rice to the skillet and stir until the grains are coated in the butter. Pour in the white wine and cook until it is absorbed. Begin adding the warm vegetable broth, one ladle at a time, stirring constantly and allowing each addition to be absorbed before adding more.

Continue this process until the rice is creamy and cooked al dente, about 18-20 minutes. Stir in the grated Parmesan cheese and season with salt and pepper to taste. Finish the risotto with a drizzle of truffle oil for that extra touch of luxury.

Once everything is well combined and the risotto is creamy, remove it from the heat. Serve hot, garnished with additional Parmesan cheese and a sprinkle of fresh parsley, if desired.

The cooked dish weighs approximately 1200g, serving 4 people with each portion weighing around 300g. Each serving is estimated to have around 400 calories.

One unique tip for this recipe is to add a splash of white truffle oil just before serving to enhance the earthy mushroom flavors and bring a touch of decadence to the dish.
