For this Winter Citrus Crème Brûlée, you’ll need the following ingredients:

  • 150g of sugar
  • 6 egg yolks
  • Juice and zest of one blood orange
  • Juice and zest of one grapefruit
  • Juice and zest of one lemon
  • 1 vanilla bean, split and scraped

To create this delightful dessert, you’ll need the following kitchen tools:

  • saucepan
  • ramekins
  • fine mesh strainer

Begin by preheating your oven to 325°F (160°C). In a saucepan, combine the heavy cream, sugar, and the scraped vanilla bean. Heat the mixture over medium heat, stirring occasionally, until it just begins to boil. Remove from heat and let it cool slightly.

In a mixing bowl, whisk the egg yolks until smooth. Slowly pour the warm cream mixture into the yolks, whisking constantly to prevent curdling. Add in the citrus juices and zest, stirring until well combined.

Strain the mixture through a fine mesh strainer to remove any lumps or bits of zest. Divide the custard evenly among your ramekins and place them in a large baking dish. Fill the dish with hot water to create a water bath for the ramekins.

Bake the crème brûlée in the oven for about 30-35 minutes, or until the centers are just set but still slightly wobbly. Remove the ramekins from the water bath and let them cool to room temperature. Refrigerate for at least 2 hours to set.

Before serving, sprinkle a thin layer of sugar on top of each crème brûlée. Caramelize the sugar using a kitchen torch until it forms a crispy, golden crust. Allow the sugar to harden for a minute before serving.
