Winter Recipe: Creamy Pumpkin and Sage Risotto

Today, I’m excited to share a delicious and comforting winter dish that is perfect for cozy nights at home. This creamy pumpkin and sage risotto is a flavorful twist on a classic Italian dish, and the combination of ingredients creates a warm and satisfying meal that is sure to impress.

For this recipe, you will need the following ingredients:

  • arborio rice (300g)
  • pumpkin, diced (400g)
  • onion, finely chopped (1 medium)
  • garlic, minced (2 cloves)
  • fresh sage leaves, chopped (1/4 cup)
  • vegetable broth (1 liter)
  • butter (50g)
  • parmesan cheese, grated (1/2 cup)
  • salt and pepper to taste

To prepare this dish, you will need the following kitchen tools:

  • saucepan
  • wooden spoon
  • chef’s knife
  • cutting board

Begin by heating the vegetable broth in a saucepan over medium heat until it simmers. In a separate large saucepan, melt the butter and sauté the onion and garlic until they are soft and fragrant. Add the arborio rice to the pan and toast it for a few minutes until it is lightly golden.

Next, add the diced pumpkin and chopped sage leaves to the pan with the rice and stir to combine. Begin adding the hot vegetable broth to the pan, one ladle at a time, stirring constantly and allowing the liquid to absorb before adding more. Continue this process until the rice is creamy and tender, about 20-25 minutes.

Once the risotto is cooked to your desired consistency, stir in the grated parmesan cheese and season with salt and pepper to taste. Remove the pan from the heat and let it sit for a few minutes to allow the flavors to meld together.

Finally, serve the creamy pumpkin and sage risotto hot, garnished with additional sage leaves and a sprinkle of parmesan cheese. This dish serves 4 people and weighs approximately 1200g in total. Each serving is around 300g, with an estimated calorie count of 400 per serving.

A clever tip for this recipe is to add a splash of white wine to the risotto before adding the broth for an extra layer of flavor. The acidity of the wine balances out the richness of the pumpkin and cheese, creating a perfectly balanced dish.

I hope you enjoy making this creamy pumpkin and sage risotto as much as I do. Feel free to experiment with different vegetables or herbs to make it your own. Happy cooking!
