Flavorful Coconut Quinoa Breakfast Bake

Today, I’m excited to share a unique and flavorful breakfast recipe that I recently whipped up in my kitchen. I love experimenting with different ingredients and flavor combinations, and this dish is no exception. It’s perfect for a lazy weekend morning when you want to treat yourself to something special.

Ingredients:

  • quinoa
  • coconut milk
  • ripe bananas
  • desiccated coconut
  • ground cinnamon
  • maple syrup
  • vanilla extract
  • pecans, chopped

Kitchen Tools:

  • saucepan
  • wooden spoon
  • grater
  • oven

To start, rinse the quinoa under cold water and then place it in a saucepan with the coconut milk. Bring it to a boil, then reduce the heat and let it simmer for about 15 minutes until the quinoa is cooked and fluffy.

While the quinoa is cooking, preheat your oven to 180°C. In a baking dish, mash the bananas and mix in the desiccated coconut, ground cinnamon, maple syrup, and vanilla extract. Once the quinoa is cooked, stir it into the banana mixture until everything is well combined.

Spread the quinoa and banana mixture evenly in the baking dish. Sprinkle the chopped pecans on top and bake in the oven for about 20 minutes, or until the top is golden and crispy.

Once the dish is cooked, remove it from the oven and let it cool slightly before serving. The aroma of coconut and cinnamon will fill your kitchen, making your mouth water in anticipation.

This unique breakfast dish weighs approximately 800 grams in total and serves about 4 people. Each serving is around 200 grams, with an estimated calorie count of 300 per serving.

One unusual tip I have for this recipe is to sprinkle a little extra cinnamon on top before serving to enhance the flavors and add a touch of warmth to the dish.
