Roasted Fall Harvest Soup

Today, I am excited to share a delicious and hearty recipe for Roasted Fall Harvest Soup. As the weather starts to get cooler, there’s nothing more comforting than a warm bowl of soup filled with seasonal vegetables and aromatic spices.

Ingredients:

  • 1 medium butternut squash, peeled and diced
  • 1 large sweet potato, peeled and diced
  • 2 medium beets, peeled and diced
  • 3 carrots, peeled and diced
  • 1 red onion, chopped
  • 4 garlic cloves, minced
  • 3 tablespoons olive oil
  • 6 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • Salt and pepper, to taste

Kitchen Tools:

  • baking sheet
  • large pot
  • immersion blender

To start, preheat your oven to 400°F (200°C). On a baking sheet, toss the diced butternut squash, sweet potato, beets, carrots, onion, and garlic with olive oil, cumin, coriander, cinnamon, salt, and pepper. Roast in the oven for about 30-40 minutes, or until the vegetables are tender and caramelized.

Once the vegetables are roasted, transfer them to a large pot and add the vegetable broth. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes to allow the flavors to meld together.

Using an immersion blender, carefully blend the soup until smooth. If you prefer a chunkier consistency, you can leave some vegetables whole and just partially blend the soup.

Serve the Roasted Fall Harvest Soup hot, garnished with a dollop of Greek yogurt, a sprinkle of fresh herbs, and a drizzle of olive oil.
