This creamy and indulgent recipe combines the earthy sweetness of pumpkin with the warm, aromatic spices of fall to create a dish that is perfect for cozy autumn evenings.

To start, gather the following ingredients:

  • 250g arborio rice
  • 200g pumpkin puree
  • 1L vegetable broth
  • 1 medium onion, finely diced
  • 2 cloves of garlic, minced
  • 120ml white wine
  • 50g butter
  • 50g parmesan cheese, grated
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • to taste

You will also need the following kitchen tools:

  • saucepan
  • wooden spoon
  • ladle
  • grater

Start by heating the vegetable broth in a saucepan over low heat. In another saucepan, melt the butter and sauté the diced onion and minced garlic until translucent. Add the arborio rice to the pan and toast it for a few minutes until it becomes slightly translucent around the edges.

Next, pour in the white wine and allow it to simmer until almost fully absorbed. Begin adding the warm vegetable broth one ladle at a time, stirring constantly and allowing it to be absorbed before adding more. This process will take about 18-20 minutes, and the risotto should be creamy and tender.

Once the risotto reaches the desired consistency, stir in the pumpkin puree, cinnamon, nutmeg, and grated parmesan cheese. Season with salt and pepper to taste, and let the flavors meld together for a few more minutes.
