Curried Pumpkin and Lentil Soup

Today, I’m excited to share a cozy and flavorful recipe for curried pumpkin and lentil soup. This dish is perfect for chilly fall days when you want something warm and comforting. The combination of pumpkin, lentils, and aromatic spices creates a delightful blend of flavors that will surely warm your soul.

Ingredients:

  • 1 small pumpkin, peeled and diced (500g)
  • 1 cup red lentils (200g)
  • 1 can coconut milk (400ml)
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons curry powder
  • 4 cups vegetable broth (1 liter)
  • Salt and pepper, to taste
  • 2 tablespoons olive oil

I start by heating olive oil in a large pot over medium heat. Once hot, I add the chopped onion, minced garlic, and grated ginger, sautéing until fragrant. Next, I sprinkle in the curry powder and stir it into the mixture, allowing the spices to bloom.

Then, I add the diced pumpkin, red lentils, coconut milk, and vegetable broth to the pot. I bring the soup to a boil, then reduce the heat and let it simmer for about 20-25 minutes, or until the pumpkin and lentils are tender.

Once the soup has cooked through, I use an immersion blender to blend the ingredients until smooth and creamy. I season with salt and pepper to taste, adjusting the seasoning as needed.

Serving:

The cooked dish weighs approximately 1500g, yielding about 6 servings. Each serving is around 250g. This hearty soup is approximately 300 calories per serving.

One unusual tip for this recipe is to add a dollop of Greek yogurt or a sprinkle of toasted pumpkin seeds on top before serving. This extra touch will add a creamy texture and a delightful crunch to your bowl of soup.
